I wanted to celebrate this top restaurant Reale with Chef Niko Romito going Vegetarian, it is a brave move but the time is right to open minds to new flavours and possibilities that have been ignored for too long.

Yes I am talking about eating more plants less meat which is a touchy subject especially here in Piemonte where is it hard to find even Vegetarian options displayed at all.

This Michelin rated restaurant gaining the third star after making this trsnsformation. This is leading the way and I sincerely hope others, not just Verdmont will follow, it is a path to healthier more planet sensitive way to enjoy delicious food.
