Crafted in 1956, this mill stone embodies craftsmanship that has endured through generations, faithfully grinding grains into flour using age-old techniques powered by modern technology and a powerful solar array.

Organic Flour Crafting Redefined

Within the walls of Mulino Marino, tradition meets innovation in the pursuit of crafting exceptional organic flour. While the limestone mill proudly preserves its heritage, the ethos of the mill embraces modernity, championing organic farming practices. The result? The stone milling actually preserves all the natural nutrients of the grain, the idea is to lose as little as possible in the processing. The stone works at 10x slower pace than modern industrial mills and as a result the temperature stay lower (around 45 degrees)

As I stepped into this flour haven, the air was laden with the nostalgic scent of grains and history, beckoning me to embark on a journey through the intricate artistry of flour milling…I can promise you it is intricate and multistep process that is quite complex especially for the white flour we use in Italy. This involves multistep milling and separation and re milling in a progressively fine drum until you reach tipo 00. Now I have stocked up on flour I need to put this flour to the pizza test!! In all likelihood we will be using this for our future pizza experiences and you will be able to buy a sample starter pack to take home with you.
