Recipe – what to do with Cavolo Nero

This is a super simple recipe that takes 5 minutes to prepare and even less time to eat.

I am sure that you can use Kale instead of Cavolo Nero which is also called Tuscan black cabbage it is not easy to find outside Italy but kale will work aswell.

You can use these chips as a starter a snack or in aperitivo. It also makes a great side dish for an asian inspired meal.

Take your Cavolo Nero (black cabbage translated literally) and strip out the really woody stems you need only the leafy parts. You can save the stems for stock (in freezer until you are ready) or mince them into a soffrito. Either way try not to waste food, it is precious! Cut the cabbage up into pieces 4cm squares works well.

In a bowl place a generous amount of olive oil mix in spices and salt. I chose paprika, salt pepper, nori (for a sea like flavour) you can also use cumin or curry if you like or just stick with salt! Mix well and add your cabbage leaves. Toss and mix and place on a baking tray in a single layer. A double layer will leave them soggy.

Turn on your grill you are aiming to evaporate the water which will leave the greens crispy but not burnt. I found mine took around 5 minutes. Now eat them!! Delicious am I right?
